Vegan Sourdough Pancakes

In my previous post about 'Homemade almond Milk', I did mention that I had an idea about making vegan pancakes using almond milk. Here is the idea's execution.

Ingredients:
Sourdough Starter - 1 cup (unfed)
Almond Milk - 2 cups
Sugar - 3 TBSP
Salt - 1/2 tsp
Barley Flour - 1 cup
Whole Wheat flour - 1 1/2 cups
Vegetable Oil - 1/4 cup
Bananas - 2 medium mashed (about 2/3 cup)
Flax seed powder - 2 TBSP
Baking Soda - 1 tsp

Method:
Mix the flours, sugar, sourdough starter, almond milk. Let it sit at room temperature overnight or at least 6 hours. After this period of time, in another bowl, mix mashed bananas, vegetable oil, salt. Add the flax seed powder and mix well. Dump the contents of this bowl to the batter which is sitting overnight. Add baking soda and fold in the batter.

Heat an iron skillet or non-stick griddle. Spray the pan with vegetable oil spray and start making pancakes. When bubbles appear, flip them and cook them on the other side. Serve with your favorite syrup. The pancakes had a very nice banana taste and is pretty nutritious with all different flours and flax seed in them.

Notes:
You could use regular milk but then it won't be vegan. You can use melted butter in the place of vegetable oil and butter the pan before making pancakes. You could replace the flours using just all purpose flour or whole wheat flour. You might have to adjust the consistency of the batter depending on which flour you use. Add some more milk/water if it is too thick or add some more flour if too thin.

    Yes. It is a little dark in color due to barley flour and whole wheat flour. If you see barley dosa on my blog, that comes a little brown too. Thanks everyone for taking time to leave a comment.
