Coconana Loaf Cake (Coconut Banana Loaf Cake)

What is it with me and coconut? I agree I love it and I do agree that it comes naturally for a South Indian to love coconut. But, I don't know if excessive use of coconut in baked goods is the result of overstocking of coconut flakes or just my pure love for this ingredient. Anyway, after the Lemon Coconut bread, I had to experiment the same with something else. And when you have a freezer that is loaded with bananas, what else can you think of?
If you have been a regular reader on my blog, you might recall that I did have a Vegan Banana Coconut Bread. Even though this recipe is almost similar, it is not the same. This one is much sweeter the way cake is suppose to be. And of course, this one is not Vegan.

Ingredients:
All purpose flour - 1 3/4 cups
Sugar - 1 cup
Canola Oil - 1/3 cup
Baking powder - 1 tsp
Baking Soda - 1 tsp
Salt - 1/2 tsp
Mashed banana - 1 cup
Egg - 1 large
Sweetened or unsweetened coconut flakes - 1 cup
Cardamom powder - from 5 pods or 1/2 - 1 tsp (use as per your tolerance of this spice)
Method:
Preheat the oven to 350 F. Spray 3 mini loaf pans or 1 9 X 5 loaf pan with vegetable oil spray. Set aside. In a bowl, whisk together flour, baking soda, baking powder, salt, sugar, cardamom powder, coconut flakes. In another bowl, whisk together egg, oil, mashed banana till they are combined well. Pour the wet into dry mixture and stir. This is a stiff batter. Divide between the three mini loaf pans or pour into the big loaf pan. Bake for 38 - 40 minutes for a mini loaf pan and 55 - 60 minutes for a large loaf pan or until a toothpick inserted in the center comes out clean. If you feel it is browning too quickly, tent with foil after the first 40 minutes and continue to bake. Cool on the wire rack in the pan for 10 minutes and then turn it on to the wire rack to cool completely.
