Hawaiian Cobbler

I love cobblers. In fact, cobbler was one of the first desserts I had baked since it needs no eggs.I have made peach cobbler, blue berry cobbler. That's about it. I had almost forgotten about the cobbler till today. I had some ripe mangoes to be used which, my kids will consume if and only if I made mango lassi or mango milk shake. I wanted to bake something with it, but not a cup cake or muffin or bread. When I was still thinking about what to make, I saw that I had bananas too on the counter. 'Hawaiian' flavor is what came to my mind. All I needed was to add some pineapple and some coconut. To be honest, I cannot praise this cobbler in any words. This was out of this world.

Ingredients:
For the fruit mixture:
  • Ripe Mango - 1 peeled, seeded and cut into cubes
  • Crushed pineapple - 3/4 cup drained. You can use fresh pineapple cut into cubes or use canned pineapple tidbits too
  • Banana - 1 sliced
  • Sweetened shredded coconut - 1/2 cup
  • Sugar - 1/4 cup
  • Corn Starch - 1/4 cup

For the biscuit/cake part:
  • All purpose flour - 1 cup
  • Sugar - 1/2 cup (You can use 1/3 cup since this was plenty sweet)
  • Salt - 1/2 tsp
  • Baking Powder - 1/2 tsp
  • Baking Soda - 1/2 tsp
  • Butter milk - 1/2 cup (I took home made yogurt and thinned it down with water to get this)
  • Vanilla - 1 tsp
  • Cold butter - 4 TBSP or 1/2 a stick

Method:
Preheat the oven to 350 F. (375 F if using aluminum pan. I was using glass pan) Mix all the ingredients mentioned in the 'For the fruit mixture' part. Let it sit for couple of minutes. In a bowl, combine flour, sugar, baking powder, baking soda, salt. Whisk together. Cut in cold butter to this mixture until it resembles coarse meal. Add buttermilk and vanilla and stir to combine. This will be a sticky mass. Pour the fruit mixture to a 8 X 8 pan. Drop the biscuit/ cake dough in spoonfuls on the top of the fruit mixture. Spread to cover the entire fruit mixture. Bake in the oven for 35 - 40 minutes or till golden brown on the top. Make sure to check the center so that it is done. Cool for couple of minutes and then slice. This is best served warm. You could serve it with ice cream, but we ate it as it is and it was pretty tasty.
