Vegan Applesauce spice mini muffins

One of the things that fascinated me when I came to this country were muffins. I used to love the banana nut muffin and used to have it with coffee in the morning almost every day. Now that I think about, maybe that's what inspired me to make so many muffins. I have all these muffins  here and I had to add one more to it. Some of the muffins posted earlier for quick reference : Chocolate chip and candied ginger muffins, Mango Mini Muffins, Pear Spice Muffins , Ragi Chocolate chip muffins , Vegan Yam Muffins.
Having made all these muffins, it is nobrainer for creating another muffin with another flavor. I had opened a bottle of applesauce and wanted to use it up. So, here goes my take on applesauce spice mini muffins.



Ingredients:

  1. All purpose flour - 3/4 cup
  2. Whole wheat flour - 3/4 cup
  3. Sugar - 1 cup
  4. Baking Powder - 1 tsp
  5. Baking Soda - 1 tsp
  6. Cinnamon (powdered) - 1/4 tsp
  7. Clove powder - 1/4 tsp
  8. All spice powder - 1/4 tsp
  9. Ginger powder - 1/4 tsp
  10. Salt - 1/2 tsp
  11. Veg or Canola Oil - 1/3 cup
  12. applesauce - 1 3/4 cup
Method:

Preheat the oven to 350 degrees Fahrenheit. In a bowl, mix all the dry ingredients. ( 1 - 10) Stir with a whisk. In another bowl mix the wet ingredients and beat well. Now, slowly mix in the dry mixture to wet mixture. Don't beat or over mix. Stir gently with a spatula. Spray the muffin pan with veg. oil spray and pour the batter 3/4 cups full. I actually made these into mini muffins. I  got 48 mini muffins out of this batter. If you are baking in regular muffin pan, you might get anywhere between 18 and 24 muffins. Bake for 12 - 13 minutes or until the toothpick inserted comes out clean. Regular sized muffins need 23 - 26 minutes of baking time.

    You could use mashed banana in its place but then it will become Vegan banana muffins. You could use sour cream too but then it won't be vegan.

    I made these muffins today and they turned out to be very good, soft and fluffy. I used whole wheat flour completely and added 1/4 cup of wheat bran too + chia gel. Thank you very much for sharing such wonderful recipe.
