Having made all these muffins, it is nobrainer for creating another muffin with another flavor. I had opened a bottle of applesauce and wanted to use it up. So, here goes my take on applesauce spice mini muffins.
Ingredients:
- All purpose flour - 3/4 cup
- Whole wheat flour - 3/4 cup
- Sugar - 1 cup
- Baking Powder - 1 tsp
- Baking Soda - 1 tsp
- Cinnamon (powdered) - 1/4 tsp
- Clove powder - 1/4 tsp
- All spice powder - 1/4 tsp
- Ginger powder - 1/4 tsp
- Salt - 1/2 tsp
- Veg or Canola Oil - 1/3 cup
- applesauce - 1 3/4 cup
Preheat the oven to 350 degrees Fahrenheit. In a bowl, mix all the dry ingredients. ( 1 - 10) Stir with a whisk. In another bowl mix the wet ingredients and beat well. Now, slowly mix in the dry mixture to wet mixture. Don't beat or over mix. Stir gently with a spatula. Spray the muffin pan with veg. oil spray and pour the batter 3/4 cups full. I actually made these into mini muffins. I got 48 mini muffins out of this batter. If you are baking in regular muffin pan, you might get anywhere between 18 and 24 muffins. Bake for 12 - 13 minutes or until the toothpick inserted comes out clean. Regular sized muffins need 23 - 26 minutes of baking time.

ReplyDeleteYou could use mashed banana in its place but then it will become Vegan banana muffins. You could use sour cream too but then it won't be vegan.

ReplyDeleteI made these muffins today and they turned out to be very good, soft and fluffy. I used whole wheat flour completely and added 1/4 cup of wheat bran too + chia gel. Thank you very much for sharing such wonderful recipe.
