Sprouted Moong Salad

I was looking at my recipe index and I realized that I have no salad and soup recipes posted. I agree that I have started blogging only for the past 3 months or so, but still I didn't like the idea that there are no salad recipes and in fact I make them often. Here is one of my favorite salads. Like any other dressing, you can change the flavors of your dressing to your taste.


Ingredients:
Sprouted Moong - 1 cup
Tomatoes - 1 big chopped fine
Zucchini - 1 medium grilled and then chopped (see my tips)
Green Bell pepper - 1 grilled and then chopped (see my tips)
Green onion chopped - about 3/4 cup (I used only green parts)
Cilantro chopped - 1/4 cup

For the dressing:
Lime juice freshly squeezed from 1 lime - about 3 TBSP
Extra virgin olive oil - 3 TBSP
Salt - to taste
Pepper - to taste
Garlic - 2 pods minced
Honey - 1 TBSP or to taste (You could use sugar instead too)
Cayenne pepper - 1/2 tsp or to taste.


Method:
Mix all the ingredients mentioned in 'For the dressing' and keep aside. In a large bowl, take the sprouted moong, all other veggies and toss to mix. Mix cilantro well and pour the dressing on the top and mix well. Adjust the seasoning if needed. Your salad is ready to serve.

My Tips:
If you do not have a grill, all you have to do is slice the zucchini and bell pepper into long strips and place it on hot dosa tawa or a flat skillet. Use very less olive oil on the pan and place the veggies. Don't keep on moving the veggies. Let them get a little char and then flip them and let the same happen on the other side. You won't get the grill mark, but will work the same.
You could add a chopped apple or pear to this salad and leave out honey. It'll  bring out a little bit of sweetness. You could sprinkle some toasted nuts or some dried sweetened cranberries too. Sky is the limit in using the veggies in any salad. Go with your imagination and liking.
