Roasted Red Pepper Dip

Everyone has different passions. People who like to dress up probably want to hit the stores the moment a new styled dress is advertised. Some men can stand in queue in early hours to get their favorite video games. Some women want to have the newest makeup and so on. Foodies want to try out different things. If I could, I probably would make 5 different new things every day. I can't. But, when I saw this dip on Kalyn's kitchen, I so badly wanted to make it right away. I didn't have one ingredient that she has used on hand. That didn't stop me from making it either. I used ricotta cheese instead of feta and made this dip. Totally awesome. This is an easy appetizer for parties too. You can make it in less than 10 minutes and is delicious and loaded with goodness of roasted peppers and mint.

Since I like my dips spicy, I added jalapenos and some black pepper. These are completely optional.

One Year Back - Banana Chocolate Chip Bread, Eggplant Curry

Ingredients:
Roasted red bell pepper - 1 bottle (Drained weight 12 Oz)
Cream cheese - 4 Oz or half a block (I used 1/3 fat but you can use fat free also)
Ricotta cheese - 1/4 cup (I used part skim fat free will work fine)
Yogurt - 1/4 cup (I used home made)
Garlic - 2 pods
Mint - Chopped about 2 TBSP
Lime juice - Half of a lime or about 2 TBSP
Olive Oil - 1 TBSP
Salt - to taste
Black pepper - to taste
Jalapeno peppers - Drained 2 TBSP or fresh 1 or 2 based on spice level (remove the seeds and rib if you can't take the heat) - optional
Method:
Drain the peppers. If you are roasting the red bell peppers yourself, use about 4 - 5 large ones for this proportion. Chop the mint. Coarsely chop the garlic, jalapeno peppers if using. Place the cream cheese, coarsely chopped bell peppers, jalapenos, ricotta, yogurt, garlic, mint in the bowl of the food processor and process till smooth. Add the lime juice, olive oil, salt and pepper to taste and run for couple more seconds till everything comes together. Serve with veggies or pita chips or any kind of chips.

My Father-in-law who doesn't like anything but Indian food loved it. It was that good. My 4 year old called it 'chutney' and had a blast eating with pita chips I made with this dip.
