Quick Chocolate Cupcakes

My younger one who turned 4 this weekend wanted a princess cake. I had neither the time nor the energy to make it. I had to convince her on these cupcakes.
She ate the cupcake and after couple of hours, started crying that I didn't make her a big princess cake. So, I have to make one more cake when I feel up to it.
Quick Chocolate Cupcake

One Year back - Eggless Chocolate Sourcream Pound Cake.
Adapted from here.
Ingredients:
All purpose flour - 1 1/4 cups
Unsweetened cocoa - 1/4 cup
Baking Soda - 1/2 tsp
Salt - 1/4 tsp
Sugar - 1 cup
Egg - 1 Large
Vanilla extract - 2 tsp
Vegetable Oil - 1/2 cup
Hot water - 3/4 cup

Frosting:
Refer to this post.

Method:
Preheat the oven to 350 F. Line a 12 cup muffin pan with liners. I usually spray the paper cups with vegetable oil spray, but is optional. In a bowl, combine all the dry ingredients (flour, baking soda, salt, sugar, cocoa). Whisk together well. If there are lumps in the cocoa, sift it to remove them.

In another bowl, combine vegetable oil and egg. Whisk to combine. Add vanilla extract and stir. Dump the dry ingredients to the wet part by part followed by adding the hot water and mix well. This batter is very thin and is of pourable consistency. Take the batter in a measuring cup and pour into the paper lines cups. It almost fills till the top. Don't worry. It will bake up just fine. Bake for 22 - 25 minutes (Source said it would be done in 18 - 20 minutes, but they were not done at 20 minutes) or until a tooth pick inserted in the center comes out clean.
Quick Chocolate Cupcake
Cool in the pan for 10 minutes and then remove carefully and let it cool on wire rack. Frost as desired. I frosted mine with my usual buttercream and decorated with some sprinkles.

  12. I echo ur sentiments about kids flashing the latest gadgets! U bet our kids are spoiled for food, my son asks me for desert after dinner everyday(of course I can't afford to feed him or us that on a daily basis)

The sprinkles on the cupcakes look so very cute!

  13. Belated Happy birthday to the little one...

Very right of her to demand a fully decorated, special cake for her... Not fair of you, esp you, to get on with just cup cakes, (though the cup cakes look amazing....)
I am with her to support in her demand for a full fledged decorated cake!!! Yes, yes, i am selfish here, as i want to drool over another lovely creation from you :)

  21. I am sure you are really convincing, if you convinced a 4 yr. old girl out of princess cake, but then for me, a chocolate cupcake is always to die for :)

  22. I can see my son doing the exact same thing. Enjoy the chocolate cupcake and later sit and cry abt the princess cake. Kids are funny sometimes.
Cupcakes look super yummy. I try to bake something for my son's b'day every year. Makes me feel that I'm doing some thing special even with my limited skills.

  23. Hello,Thanks a ton for the lovely and detailed baking recipes you have kept...I vist your blog very often, infact daily 2-3 times and just read everything....you write very nicely, and ofcourse I try the recipes too...especially cakes and bakes since, I am very new to this..everytime, everything has comeout well!! but I couldnot comment since I was browsing from my phone and it was very difficult to comment from there..
I feel very bad that I am very late in thanking you for doing such a nice job and also, making me a proud mom infront of my two kids...infact, my 7 yr old son himself tried ur easy vanilla cake and shared it happily and proudly with 3 other families...
    Thanks a lot...
    Meena.
