This is my work for day #2 of the 7 day blogging marathon. Geez, I sound like I am writing a journal, but then again blog is a journal. Public of course.
Source of this recipe had fresh cranberries. I neither had the fresh nor frozen berries. I used dried sweetened cranberries. You could even use raisins in its place.

Almond Joy Cookies
Adapted barely from -
Martha Stewart site.
Ingredients:
Butter - 4 TBSP or 1/2 a stick
All Purpose flour - 2 cups spooned and leveled
Granulated sugar - 1 cup
Baking Powder - 1 1/2 tsp
Baking Soda - 1/2 tsp
Salt - 1/2 tsp
Egg - 1 large
Milk - 3/4 cup (I used 2 %)
Sweetened dried cranberries - 1 cup
Method:
Preheat the oven to 350 F. I did mine at 325 F since I was using a dark pan. Grease and flour a 9 X 5 loaf pan. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt. Set aside. In a microwave safe bowl melt the butter. Let it cool. Add milk, egg to it and beat it till egg is incorporated with the rest of the liquid. Add the dry mix and stir gently. Add dried cranberries and stir to combine. Pour into the prepared pan and bake for 55 - 60 minutes or until a toothpick inserted in the center comes out clean. It took about 55 minutes for mine. Source says to bake for 1 hour 15 minutes but I checked at 45 minutes and covered with a foil to prevent over browning. It was done in total 55 minutes. Could be because I used dried cranberries and the juices from fresh cranberries would make the bread take longer to bake. Cool in the pan for 15 minutes and then turn out on to the wire rack. Serve as is or topped with butter or honey.
