Yam Rolls

Do you watch reality shows? I watch only musical reality shows. Not american idol though since I don't understand the music that they sing. Some of the singers' vocal strength amaze me, but still I can't make out much of it.
Indian music is a totally different story altogether. Be it film music, hindusthani or carnatic classical. Even when I am not trained, I know when I am listening to good music.
Coming to the point, I watch Indian Idol thanks to people who upload videos on youtube. Today, Swaroop Khan was eliminated. So, top three people are my favorite Shreeram, very good singer in my opinion Rakesh Maini and the not so good in my opinion Bhoomi Trivedi.
If there are any fans of these people, please don't bash me. I am expressing my opinion here. I would've loved to see Shreeram, Shashi Suman and Shivam in finals. No, I am not prejudiced towards boys. Girls this time on Indian idol were really bad. Not a single person could sing without going flat once. They say 'Shruthir matha, layah pita' in Sanskrit. When a person cannot hold sur/shruthi/tune, that person cannot be called a good singer.
Shreeram and Rakesh are what you call surile in hindi or very melodious singers. Bhoomi on the other hand isn't. Anyway, it is funny that she made it to finals and that is okay with me. I would be disappointed if she moves on and one of the other two get eliminated. I just wanted to vent my disappointment about these shows and since I don't have anyone to talk to about these, I am writing it here. If you did read this, thank you.
Coming to the comfort of food zone, I made yam rolls today since I had only one yam and didn't know what else to do with it.

Ingredients:
Bread Flour - 3 - 3 1/4 cup (It took 3 cups + 2TBSP for me)
Yam - 1 large cooked, peeled and mashed and then measured. 1 1/4 cup. If you have slightly more or less, don't worry, you can adjust the flour to take care of it.
Warm water - 1/3 cup
Sugar - 3 TBSP
Salt - 1 tsp
Active dry yeast - 2 1/4 tsp
Olive oil or any kind of oil - 3 TBSP
Milk - for brushing before baking
Butter - for brushing after baking (optional)

Method:
In a bowl, pour warm water. Sprinkle sugar and yeast to it. Let it froth, about 5 minutes or so. Add salt, yam puree, oil and mix. Slowly start adding the flour to make a smooth ball. Knead for about 10 minutes. Coat with oil and cover with a kitchen towel and let rise for one hour or until double in bulk. Punch down the dough and knead gently for couple of minutes. Divide the dough into 12 balls of equal size. Let the dough rest a while before you shape them into balls. I used a 7 X 11 pan and if you space them apart, you will get nice round buns. I wanted them to touch each other more like Pav buns. Cover with an oiled aluminum foil and let rise for about 45 minutes.
Preheat the oven to 375 F. Brush the rolls with some warm milk. Bake for about 15 minutes and lower the temperature to 325 F and bake for another 10  more minutes or till nicely brown on the top and bottom sounds hollow when tapped.

Once the pan is removed from the oven, place it on the wire rack to cool. Brush with butter when still warm.

This can be used for sandwich or like a dinner roll. I am planning to make some spicy curry to go along with this.

  2. :) I have never watched YouTube videos of Indian Idol, but I enjoyed reading your critique.
    Love the idea of yam bread-- you do mean sweet potato, right? I would love to try this soon, and it seems easy enough to veganize since you only use the milk and butter for brushing-- I could easily substitute with soymilk and margarine.

    Vaishali, I didn't have any soy milk otherwise I was planning on making it a vegan recipe. I used a yam. I had the assumption that both yam and sweet potatoes are same, but they aren't check it out if you are interested

    But, I don't see why you can't use sweet potato in its place. It should work.

    And, yes, I soooooooooo agree with you that Sriram and Rakhesh are the best of the lot (of course I liked Shivam too) and I also agree that Bhoomi is not better than Shivam to be in top 3 :(

  15. Champa, I have a query.... Isn't yam what we call marageNasu? I had once got it and it took unreasonably long time to cook, and in fact we felt it didnt cook soft at all.... Is there any special way of cooking it or is it ok like that?

    No. Yams are tubers and their equivalent in kannada are Genasu. Maragenasu is a fruit (hard, I know) but more like pears that we get here. Hope this helps. Pressure cooker works wonders for anything that is hard.

  18. I share the same opinion as yours. but Indian idol is like this only ...more than the singing talent they look for presentation and the so called X factor and thats why Bhoomi has come till this place.
    the Yam rolls look divine. the buns are moist but fluffy. unique and awesome recipe.
