Wholegrain Waffles

'Happy Mother's Day to all mothers'
Did I tell you I am worried? No, I am worried sick. You want to know why? Because I have to leave my kids and go away on work for 6 days. This is the first time I am leaving my babies. I am worried if they will be fed properly, cleaned and dressed properly. Will they go to their pre-school on time? Will their hair be clean and combed? I have no clue about that. Even when I have no control on the above mentioned worries, I thought I can take control of food. Obvious, a foodie will always think about food. You may ask why? because my husband cannot really cook. Well, he probably will if I let him, but for now, let's say he doesn't cook.

I have been planning and cooking for those 6 days these past 2 days. I made about two dozen rotis, I made enough dosa batter to feed a crowd, I made these waffles for breakfast for the kids. I made a huge batch of chana masala and froze them in individual containers. I made yogurt from a gallon of milk. I probably will make some other dishes before my flight today. I even put together each day's clothing for them separately. So, they are covered, right? Does this make me feel better, nope. I have no idea how people leave their kids and go. I can't say that I'll learn since my job is not a traveling kind at all. In the past 6 1/2 years of working in the same company/ position, this is the first time I have been asked to travel. Anyway right now, I am very nervous.

But, that doesn't stop me from sharing these wonderful waffle recipe with all of you. Those who do not have waffle iron, try making them as pancakes. There isn't too much of difference between them anyway.


Ingredients:
  • Vegetable Oil - 1/4 cup
  • Milk - 2 1/2 cup
  • Applesauce - 3/4 cup
  • Eggs - 3 large or extra large if using small, use 4.
  • Whole wheat flour - 1 1/2 cups
  • Flax seed meal - 1/2 cup
  • Cornmeal - 1/2 cup (I used stone ground)
  • Brown rice flour - 1/3 cup
  • Wheat Germ - 3/4 cup
  • Malt powder - 1/4 cup (If you don't have it, use brown sugar same quantity)
  • Baking powder - 2 TBSP
  • Salt - 1/2 tsp

Method:
In a large bowl, whisk all the flours, baking powder, salt and sugar/malt. Stir to combine. In another bowl, beat eggs. Add oil, milk, applesauce and beat well. Add the wet ingredients to dry ingredients and stir to combine. It is alright if there are some lumps. Heat a waffle iron and follow the manufacturer's instructions to make waffles. Mine takes just 1/4 cup of batter per 5" waffle slot. This varies from one waffle iron to another.
Serve with some fruit or syrup and butter or just syrup.

See, a mother will always be worrying. Motherhood and Worries go hand in hand together. I am not trying to scare those ladies who are thinking of starting the motherhood soon or those who are thinking about being a mother in near future. It just is the fact. So, all mothers stop worrying at least today and have fun. Have a wonderful Mother's day. You can start worrying again tomorrow.

  4. Happy mother's day!!! A healthy version of waffles...I love them but afraid of their fat and carb content :). Do not worry dear, everything will be fine. I know how you feel...but everything will be fine for your kids and for you :)
