Long Beans in peanut sauce

I love vegetables that are very easy and fast to clean and chop. I cook everyday and cannot justify spending hours on cleaning and cutting the vegetables among all the other things I need to take care of.  I had bought long beans sometime back and had cooked palya/subzi with it just like I do with green beans. This has an earthy taste which probably is acquired taste. Nobody liked it at home but me. I think one of the reasons I liked this vegetable is because it is so easy to clean and chop. I wanted to try something new so that I get to use this vegetable every now and then and no one complains about it. I think I nailed a very good way of making a delicious side dish out of this vegetable.

Here goes the recipe..

Ingredients:
Long beans - 1 big bunch ends chopped and cut into 3/4 - 1" pieces
Tomatoes - 2 small or 1 big chopped
Red Onions - 3 medium chopped into chunks
Oil - 2 TBSP
Cumin seeds - 1/2 tsp
Cilantro - 2 TBSP chopped
Turmeric - a big pinch
Salt - to taste

For the Masala:
Peanuts - 1/2 cup
Bengal gram dal/split chickpea/ Chana dal - 1/4 cup
Cumin seeds - 1 tsp
Cloves - 6-7
Cinnamon - 1 " stick
Coriander seeds - 1/2 tsp
Green chillies - 8 or more if you like it spicier
Garlic - 2 pods
Coconut - Grated 1/3 cup


Method:
In a big pan, place all the chopped long beans. Pour enough water to cover the beans. Add some salt and let it cook till tender. Meanwhile, in a skillet, dry roast peanuts and chana dal till golden. Remove and set aside. In a big pan, take 2 TBSP of oil. When hot, add cumin seeds and when done add chopped onions. Add some salt and turmeric and let it cook. When onions are cooked, add tomatoes and when the mixture is simmering, place all the ingredients mentioned in the masala section above and grind into a fine paste by adding some water. When the tomatoes are almost done, add this paste, drained cooked beans reserving the water and stir. Add reserved water as needed to bring it to the right consistency. Adjust the salt and add chopped cilantro. Let it simmer covered for couple of minutes and turn off the heat. Serve with rotis, chapathis or even rice.

  16. Sum, yes that is what they call it in kannada. You can make these with regular green beans too.
