Egg less Orange Muffins

If you have read my initial posts, you must have read about how big a deal my daughter makes of her 'Bus Driver' day. That is when she gets to take a book from home and read it to the entire class by herself. I usually send a snack that is related to the story. This time, she chose a sesame street book 'Grover's Lucky Jacket'. For some reason, I had thought she had chosen 'Grover sleeps over'. I came back from work and my husband reminded me about the snack. I decided to make some 'Blueberry cobbler' or 'Blueberry bars' since there is a talk about a cereal called 'Blueberry Chew' in that book. My kid walks and says that she doesn't want anything to do with blueberries because she chose the other book. I was okay with that, but there is no food involved in this book except they show a picture of Grover at the breakfast table with milk, orange juice, cereal and a toast. My kid wanted me to make bread and I had told her that if I got up early, I would make it. And I didn't. So, I had to come up with something. I made muffins out of Orange juice. They had orange juice in the book and so Orange muffins are alright for a snack right? but not according to my 5 year old. Sometimes I wonder what all we do for these kids and they just don't get it.

This is adapted from a book by 'The Complete Book of Baking by Pillsbury'. I made some changes to make it egg less.


Ingredients:
  • All purpose flour - 2 cups
  • Sugar - 1/2 cup
  • Salt - 1/2 tsp
  • Baking powder - 3 tsp
  • Corn starch - 2 TBSP
  • Milk - 2 TBSP
  • Vegetable or Canola oil - 1/3 cup
  • Orange Juice - 3/4 cup
  • Apple cider vinegar - 1/4 tsp
  • Orange zest - 1 tsp (I didn't have any so I omitted it)

For the Glaze: (Optional)
  • Confectioner's sugar - 1 1/3 cup
  • Vanilla extract - 1 tsp
  • Milk - 1 - 2 TBSP 


Method:
Preheat the oven to 375 F. Grease a 12 standard size muffin tin with vegetable oil spray or line with liners. In a large bowl, combine all the dry ingredients (flour, baking powder, corn starch, salt, sugar and zest if using). In another bowl, combine orange juice, vegetable oil, milk, vinegar. Let it sit for 5 minutes. Whisk it well and pour into the dry ingredients. Mix them but do not over mix them. Batter will be lumpy and thick. Fill the cups 2/3 full and bake for 20 - 25 minutes or till a tooth pick inserted in the center comes out clean. Mine were done at 22 minutes. I actually doubled the recipe and made 2 dozen muffins. Cool in the pan for 5 minutes and then transfer on to the cooling rack to cool completely.

When the muffins are cooling, make the glaze. Take the confectioner's sugar in a bowl and add vanilla. Slowly add 1 TBSP of milk and stir to combine. Add a little by little till the desired consistency is reached. Pour little on each muffin. They set up within 10 minutes. I had no plans of adding the glaze in the beginning. When I tasted the muffins, they were not that sweet at all. So, to add something extra, I made the glaze. You see those lines of glaze, I thought I'll make zigzag pattern on it. But since the glaze was not colored, it was hardly noticeable and I started pouring globs of glaze on them. I should've just dipped them in glaze instead. Oh, well I really didn't have time in the morning to be prepared with a plan and that's all I could do. It tasted very good though.
