Almond Joy Cookies

I don't think the title for this recipe is appropriate, but I like to call them that way mainly for one reason. It has almond, chocolate, coconut just like almond joy candy which is my favorite. I was looking to make some cookies for my kids and at the same time thought of using brown rice flour in it. I had book marked this recipe which, I had found from Madhuram's site. I made some changes and the result was an awesome, healthy, nutty cookies.

Here goes my version..

Ingredients:
  1. 1/4 cup almond butter (Homemade)
  2. 1/4 cup I can't believe its not butter ( 1/2 a stick)
  3. 1/3 cup brown sugar
  4. 1/3 cup white sugar
  5. 1 tsp vanilla
  6. 1/2 tsp almond extract
  7. 1 TBSP flax seed mixed with 3 TBSP of warm water
  8. 3/4 cup brown rice flour
  9. 1/2 tsp baking soda
  10. 1/2 tsp salt
  11. 1 cup rolled oats
  12. 1/2 cup sweetened coconut flakes
  13. 1/4 cup mini chocolate chips
  14. 1 tsp water 

 Method:
Preheat the oven to 375 F  and line them with parchment paper or silpat mat. In a bowl, combine all dry ingredients. Cream the butter or I can't believe its not butter with both the sugars till creamy. Add vanilla extract, almond extract, flax seed mixture, water and beat couple more times. Now, add the dry ingredients which were whisked together and blend. Fold the coconut and chocolate chips with a spatula. Drop by tablespoons 2 inches apart on the prepared sheet and bake for 10 - 12 minutes. Mine were done at 12 minutes. Cool on the wire rack. These tasted great fresh from the oven and are slightly nutty when cold. But with such a small amount of fat in it, they are amazing to snack on. Yield is 2 dozen cookies.
