Soft Chewy Applesauce Spice Cookies (Vegan)

Do you like crispy cookies or soft ones? Or very soft and delicate ones? This one falls into the category of very soft and delicate cookie. You can vary the spices to suit your taste preference. I was experimenting a cookie with applesauce. This is what I came up with. This one doesn't suit to pack in the box and give it as a gift since it is so soft, but is perfect with a cup of milk and not very high in calories either.

All purpose flour - 1 cup
Dark Brown sugar - 1/2 cup packed
Salt - 1/4 tsp
Baking soda - 3/4 tsp
Cinnamon - 1/2 tsp
Nutmeg - 1/4 tsp
Oil - 1/4 cup
Molasses - 2 TBSP
Applesauce - 1/4 cup or 4 TBSP
Preheat the oven to 350 F. Line a baking sheet with parchment paper. In a bowl, whisk together flour, brown sugar, spice powders, baking soda, salt. In another bowl, whisk together molasses, applesauce, oil. Dump the liquid into dry ingredients and stir to combine.  It is a bit wet dough to make balls, but you should be able to roll them into balls. If you feel it needs a bit stiffening, refrigerate for about an hour. Make 1" balls and place on the baking sheet 2 - 3 inches apart. Bake for 10 minutes. They spread a lot and puff up and once removed, drop and become flat. They will still be soft when you pull the baking sheet from the oven, but firm up a little after cooling. Cool on the baking sheet for 10 minutes.

  3. it dont look like u r going to get tired:) those cookies look fabulous.. i love soft cookies.. the only crunchy ones i like a ginger snaps.. others i;d rather be able to chew and not break a tooth!:)

  4. Those look fantastic! The texture looks perfect to me. I've never had much success with using applesauce in cookies, they always turn out cakey(at least the recipes I've tried, or maybe I just use too much), but these look so good!

  5. Holy moly! These are AMAZING! I had homemade applesauce with a bit of nectarine and pear mixed in that I used. They are slightly cakey (but I am eating them right out of the oven 'cause they smell so good!) This is a keeper for sure! Thank you!
