Two cake recipes

Today was Thanksgiving feast at my kindergartner's school. Almost a month back, a list of things needed was emailed and they were requesting three desserts. I jumped at that opportunity and said I would give one of the desserts. And we settled on pumpkin spice cake. A week back, I was contacted requesting if I could make one more dessert. (I guess I was the only one making it vs. buying it from the store)

I made a Pumpkin spice bundt cake with a sugar glaze and a chocolate cake with powdered sugar dusted on the top. I didn't have time in the morning to take pictures to post it and all was gone to bring back a slice to take a picture. Here goes the two recipe links with my changes if any.

Pumpkin Pound Cake:
I didn't make too many changes. I used my own spice variation of 1 tsp of cinnamon, 1 tsp ginger, 1/2 tsp cloves, 1/4 tsp nutmeg, 1/4 tsp allspice. I did add 1 tsp baking powder along with the baking soda since I thought 2 tsp of baking soda wasn't enough leavener. Cake was baked at 325 F (using dark bundt pan) and it was done in 65 minutes. I glazed it with simple sugar glaze.

Chocolate Cake:
I did use the recipe as mentioned, but instead of 3/4 cup cocoa, used 1/2 cup cocoa and 2 cups of all purpose flour. I used hot water instead of hot coffee. Kids were saying "This is so goooooooood" and stuffing their mouths and it was very funny to see that. I baked the cake in a 13 X 9 pan and it took about 40 minutes to bake. If you bake this, make sure you line the pan with parchment. I did and I was thankful that I did. This is a very moist cake.

Thought of sharing these since I do not know when I will make these cakes again and post. I probably will make the pumpkin pound cake again pretty soon and will blog about it for sure. I probably will use half of the amount of oil and use applesauce for the rest.

  3. Very nice blog with good recipes- one request- could you stop using exclamation marks for your post titles? It almost makes it look like you're surprised you made that recipe/dish.
    It's your blog and your decision- just a suggestion. Hope you take this in the right spirit.
