Black Eyed Beans, Tomato Sauce Curry

Many people love black eyed beans. Some people don't like the smell of it. I feel it has an earthy smell to it which makes people not like it. If not for that earthy smell, it is so buttery and tasty. I make couple of different kinds of curries with this. But today, I was more interested in using up some of the stuff in the refrigerator and this is what I came up with. Goal was to use tomato sauce from an opened can, some green onions that needed to be consumed. It is not anything special. I have made so many using tomato sauce, but since Ruchika has an event that is about 'Black Eyed Beans', I thought why not blog about it.

But, do watch out tomorrow for another decorated cake pictures. It will be a very small, simple cake for one of my colleagues.

Ingredients:
  • Black Eyed Beans - 1 1/2 cups soaked overnight and then pressure cooked till soft
  • Red Onions - 2 medium diced
  • Tomato sauce - 1 cup
  • Salt - to taste
  • Oil - 2 TBSP
  • Cumin seeds - 1 tsp
  • Garlic - 2 pods 
  • Red chilli powder - 1/2 tsp or to taste
  • Chat masala - 2 tsp or to taste (These differ in hotness by brand. If yours is too hot, omit chilli powder)
  • Scallions - 1 bunch (about 5 - 6) chopped green part and white part seperated.

Method:
In a pan, heat oil. When hot, add cumin seeds. When they splutter, add chopped garlic, red onions. Add some salt and let it cook. When onions are almost half done, add the white parts of the scallion. Reserve the green part for garnishing. When the onions are thoroughly cooked, add tomato sauce, red chilli powder, chat masala. Let them simmer and now add the cooked beans. Reserve the water to make it into right consistency desired. Let it come to a boil. Adjust the liquid, salt and add the green parts of the scallion. Let it simmer for two minutes and turn off the heat. Serve with rice or rotis. Even though I made it as a side dish for rotis, I ate it with rice and it was so good. I think I am going to make this version on a regular basis since it is so easy and takes no time.
