Rye Bread

I have been baking bread for years now. And when you are into something, you want to try out different recipes. I also wanted to try making some rye bread. I tried 'Russian Rye Bread', and I tried making my favorite 'Pumpernickle'. Neither of them came out the way I wanted. Reason could be my caraway seeds which lend a bitter aftertaste to the bread. I just played around a bit with my usual bread recipe and substituted part of the flour with rye flour. This gave me a beautiful  'Rye Bread'. I did omit caraway seeds for the fear of getting bitter taste. Result was an awesome bread and I am sharing its recipe here today..


Ingredients:
  • Warm Water - 1 cup
  • Whole Wheat flour - 1 cup
  • Bread flour - 1 cup
  • Rye flour - 1 cup
  • Salt - 3/4 tsp
  • Dry Yeast - 1 tsp
  • Brown sugar - 2 TBSP
  • Vegetable oil - 2 TBSP

Method:
In a large bowl, combine water, salt, sugar and yeast. Let it sit for 5 minutes until frothy. Slowly add oil and start adding flour to make the dough. Try not to add extra flour since rye makes the dough sticky. If needed, lightly oil your hands and knead for about 10 minutes. Let it rest in a well oiled bowl covered with a clean kitchen towel in a warm place for an hour. Deflate the dough. Spray a 9 X 5 loaf pan with vegetable oil spray. This dough is very hard to shape since it is very sticky. Dump the dough into the pan and smooth the top as much as possible, but don't fret about the beautiful smooth top. Cover with a greased aluminum foil and let it rise for 45  minutes to an hour. Towards the end of the rise time, preheat the oven to 375 F. Bake for 20 minutes in the oven. Remove and cover loosely with an aluminum foil and bake at 350 F for another 15 - 20 minutes or till the bread sounds hollow when tapped. Brush the top of the loaf with melted butter or oil. Let it cool in the pan for 5 minutes and then turn it on to the wire rack to cool completely. Enjoy in a sandwich of your choice.

Note: You could make it in the bread machine. Just dump all the ingredients and select 1 1/2 pound loaf white or wheat bread setting.

  4. My sister and I have been constantly trying out bread baking with a bread machine and still we land up with some dry bread, yours look nice. Good job.
