15 Minute Vegetable Broth

Do you watch 'Iron Chef America'?  Chefs on that show make broth or stock in a pressure cooker which is ready within 15 minutes compared to traditional stock pot method. I have posted the recipe and the method for making vegetable broth here.

Same recipe if you use about 5 cups of water instead of 7 cups (remember that there is no evaporation in the pressure cooker method) and make it in the pressure cooker, your broth will be ready in 15 minutes. Put all the ingredients and water in the pressure cooker and close the lid. When the steam starts coming out, put the weight on and let it whistle twice. Turn off the heat. As soon as the pressure is released, you can open the pressure cooker. If you are in a hurry like those Iron chefs, place the pressure cooker in the sink and let the water from the faucet drip on the lid to cool it down. Open the lid and use it as per the recipe.

I thought of sharing this with all of you. You do not need to wait for one hour to get the broth ready to use it in cooking.
