Today is Day 11 of my month long Bake-A-Thon. This recipe is perfect for the holidays. Even though it is full of spices, there is a very nice balance of chocolate and spices.

Adapted from - Martha Stewart (barely)
Ingredients:
Butter - 4 TBSP melted and cooled (1/2 a stick) plus more for the pan
Unsweetened Cocoa - 1/4 cup plus more for the pan (Use natural cocoa)
All purpose flour - 3/4 cup (spooned and leveled)
Ground ginger - 1 tsp
Ground Cinnamon - 1/2 tsp
Ground Cloves - 1/4 tsp
Ground nutmeg - 1/8 tsp
Baking Soda - 1/2 tsp
Dark Brown Sugar - 1/2 cup packed
Unsulfured molasses - 1/4 cup
Egg - 1 large
Sour cream - 1/4 cup
Salt - 1/4 tsp
Semi sweet chocolate chips - 1/2 cup (I used mini ones)
Confectioner's sugar - for dusting (optional)
Method:
Preheat the oven to 350 F. Butter a 8" square pan and dust with unsweetened cocoa. Or line with parchment paper. In a bowl, beat the melted butter, brown sugar, molasses, egg and sour cream. In another bowl, whisk together flour, cocoa, salt, all the spices, baking soda. Add the dry mixture to wet and stir till nicely combined. Stir in the chocolate chips. Pour into the prepared pan. This batter is very thick and you will have to push it to cover the entire pan. Bake for 28 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan on the wire rack. When completely cool, dust with powdered sugar or even frost it with cream cheese frosting if you want to go overboard. Makes generous 9 bars or 16 medium sized ones.

ReplyDeleteYou could use honey in the place of molasses, but molasses is the main ingredient in any gingerbread recipe. That is what gives it the flavor. For the recipe to work, you can use honey or maple syrup and you will come up with a delicious bar.
Do we need to separate the egg white or just normal..because mine smelled okay my it was eggish
ReplyDeleteNo need to separate the egg. It doesn't smell eggish at all since there is only one egg. Maybe the egg was bad?
