With over 100+ bread recipes on the blog, it is not easy to come up with more new recipes. Particularly when you want everyone in the house to eat them and finish it. I agree, I have not baked a lot of crusty breads. Why should I bake them to end up eating all by myself. If it is a sweet bread, it is sure to be eaten plus most of my neighbors like the sweet stuff anyway. This recipe is adapted from a very old bread book that I have. The book is in such a bad shape that I couldn't even see the title of the book. I had some orange juice that needed to be used up, so this worked perfectly. Do stop by tomorrow for a savory bread recipe that is simple to make but very tasty.
One Year Back - Cake pans and their conversions
Two Years Back - Easiest Chakli/murukku
Ingredients: (Makes 4 mini loaves or 1 Large loaf)
Warm water - 1 cup
Freshly squeezed orange juice - 1 cup
Oil - 1/4 cup
Orange zest - 1 TBSP
Eggs - 2 large lightly beaten
All purpose flour - 2 cups
Oats - 2 cups (quick or rolled oats. I used rolled oats)
Sugar - 2/3 cup
Baking Soda - 2 tsp
Baking powder - 2 tsp
Salt - 1 tsp
Mini Chocolate chips - 1 cup
Method:
Preheat the oven to 350 F. Grease one large ( 9X5) or 4 mini loaf pans with vegetable oil spray. In a bowl, whisk together the flour, oats, sugar, baking powder, baking soda, salt, orange zest. Set aside. In another bowl, whisk together beaten eggs, oil, water, orange juice. Dump the dry ingredients into wet and stir to combine gently. Stir in the chocolate chips. Divide among the mini loaf pans or pour the batter into the large pan. Bake the mini loaves for 40 minutes and the large loaf for about 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes and then turn it on to the wire rack to cool completely.
Notes:
This is not a very sweet bread. You could add about 1/4 cup sugar to the batter if you like it very sweet. This makes a good breakfast loaf or a snack bread.
