Vanilla Cake using Homemade Cake Mix

Lot of people ask me why I blog. When I say there is so much pleasure when someone emails you with a feedback or write a thank you note for doing this, many people look at me as if I am crazy. You might wonder why I am writing this. Remember the post that I wrote about making 'Homemade Cake Mix' where I gave variations to it? That post was written because one reader requested if I could help her with a recipe which uses cake mix and she didn't want to use the commercial cake mix. When I posted it, I said I would bake the cake as per the recipe using that mix and post it. I got busy and I never baked the cake till yesterday. But, the lady who requested the cake mix recipe made it and sent me a picture of her cake. Isn't that sweet? You have no clue how happy I was when I saw that.

People thank me for writing the blog but in fact it is the other way. Let me tell you this 'THANK YOU FOR READING WHAT I WRITE'. I know my limitations, I am no writer. And I am no food photographer. But when it comes to food, I do think it is one of my forte. You all make my day just by visiting the blog.

I baked it as a bundt cake since I was not interested in making a layer cake. You see, layer cakes are very nice with frosting and I didn't want to bother with it today. Link has instructions to bake as layered cake or a sheet cake. If baking as a bundt cake, bake for 50 - 55 minutes or until a toothpick inserted comes out clean.
Crumb texture of this cake is almost like a pound cake's but is very spongy and soft. In fact, it resembles the crumb of a chiffon cake. I was very happy with it.
