Let's say you are making coffee for a group of 10 people. You ask them how they take their coffee, there will be at least 5 different answers.
Same goes with the recipe of Garam Masala. There are many different recipes for this varying in some of the additional spices depending on which state of India the recipe came from. What I have listed is the basic Garam Masala recipe. It is so easy that I don't see why people should buy the packet of already powdered one. I really don't.
One Year back - Easiest Lemonade, Magic of Cake Mix
Adapted from - 660 Curries
Ingredients:
Dried Bay leaves - 4
Coriander Seeds - 2 TBSP
Black Pepper corns - 1 TBSP
Cumin Seeds - 1 TBSP
Black Mustard Seeds - 1 tsp
Green Cardamom - 6
Black Cardamom - 2
Cinnamon Sticks - 2 sticks (3")
Method:
Powder all the ingredients in a spice blender or mortar and pestle. Mix well and store in an air tight container and use within 3 months. Makes about 1/3 cup or 6 TBSP.
See, I told you it is so simple especially if you have a spice grinder.

I never buy ready made masalas.However good they say,I never feel it the way we prepare.And as you said here,in India,we need different styles of masalas for different regions.For example we in Kerala prepare garam masalas by just roast-grinding fennel seeds,cardamom,cloves and cinnamon.Some add pepper seeds too.Where as while making Biriyani,we have a totally different masala adding cumin,kaala jeera,maze and all.I already have posted the regular one.

ReplyDeleteTrue, everyone has their own recipe of garam masala or so I heard. I feel bad in saying, but I never made this at home, always used store-bought. May be I can start using this recipe :)

ReplyDeleteChampa, same pinch...yeterday was my masala making day, grounded lot of spices as I prefer to buy whole & grind it once in couple of weeks...I was worried that my grinder's motor might give up on me but I kept giving it a little rest between batches & we both survived....though any one coming near to me would have def. sneezed...power of freshly ground spices :-) & O'course made a batch of garam masala....in north we don't use mustard seeds....
