Some women collect hand bags. Some women perfumes and some vintage things, jewelery and what not. I have a huge collection of cake pans. Yes, you heard it right. You tell me a shape and I have that shaped cake pan. Maybe not all the sizes, but I do have many. If I had a huge bureau, I can fill that with all the cake pans I have. Am I done collecting? I thought so till last week. There is a very nice thrift store near my place where I go looking for stuff to take pictures. (That is another collection that is growing but nothing compared to my cake pans) I saw a rose cake pan. At first I thought it was a bundt pan and was excited about it. But when I went closer, it didn't have the center tube. When I checked the depth of the pan, it was more than 3 " and the cake batter will take forever to bake in the center in turn making the cake not so good texture wise. But the pan was so darn cute and was only 3 dollars. I picked it up. To test it, I made this cake and to avoid eating too much of it, I took it to work.
One Year Back - Rieska
Adapted from - Sourdough Vegan apple butter cake
Ingredients:
Sourdough Starter - 1 cup (unfed at room temperature 100 % hydration)
All Purpose Flour - 1 2/3 cups
Baking Soda - 1 1/2 tsp
Salt - 1/2 tsp
Sugar - 3/4 cup
Vegetable or Canola Oil - 1/3 cup
Orange Juice - 1 cup (at room temperature)
Applesauce - 1 cup (Room temperature - I used sweetened see Notes)
Orange extract - 1/2 tsp (optional)
For garnish:
Confectioner's sugar (optional)
Method:
Preheat the oven to 350 F (I baked mine at 325 F since I was using a dark pan). Spray a 12 cup (10 inch) bundt pan or a tube pan with vegetable oil spray (I used this rose cake pan which is a 13 cup pan and very wide). You can make this into loaf cakes too. Use 2 8 X 4 or 9 X 5 pans. You will have to alter the baking time though. In a bowl, combine flour, baking soda, salt. Whisk together. In another bowl, combine orange juice, applesauce, sugar, oil. Whisk till everything mixes well. Add sourdough starter and mix couple more times. Add orange extract if using and stir.
Add the dry ingredients to wet and stir slowly. It is better to fold here than whisk. Pour into the prepared pan. If using a bundt pan, it will be done by 45 - 50 minutes. (Check earlier is you are baking at 350 F). Since this cake pan has no tube in the center, it took about 58 minutes to bake. Cool in the pan for 10 minutes before turning it on to the wire rack to cool completely.
When completely cool, dust with confectioner's sugar. You could pour a glaze if desired.
Notes:
Even when this cake baked fine, it would've had better crumb if I had baked it in a bundt pan. If you are using unsweetened applesauce, use 1 cup of sugar. You can see that the outer petal part looks broken. The cake batter wasn't enough for this pan. It is a real huge pan. If I had used more batter, it would've filled the pan even better making it look prettier.

Thats a neat find! btw, whats the purpose of sourdough starter in this recipe? Any substitutions ??

ReplyDeleteWhen I feed the starter, if I am not baking bread, I make something else out of it instead of throwing it out. You can increase liquid by 1/2 cup and flour by 1 cup to make this. 1 cup of sourdough is mixture of 1/2 cup water and 1 cup flour (they weigh 4 Oz each approximately).
