Eggless Mulberry Cupcakes

Ya, ya I know what you are all thinking. Not everyone has mulberry tree in their backyard. But you could use blueberries in the place of mulberries and make these beautiful cupcakes. My kids needed to do something in the afternoon and I picked berries with them. Results of that activity lead to this..

Ingredients:
  • Cake flour - 1 1/2 cups or (use 1 1/4 cups of all purpose and 2 TBSP of corn starch)
  • Sugar - 3/4 cup
  • Vegetable Oil - 1/3 cup
  • Buttermilk - 1 cup (I used half water and half yogurt)
  • Apple cider vinegar - 1 TBSP
  • Salt - 1/2 tsp
  • Baking Powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Vanilla - 1 tsp
  • Lemon extract - 1/2 tsp
  • Mulberries or blueberries - 1 cup (If using frozen blueberries, don't thaw)

Method:
Preheat the oven to 350 F. Line a muffin pan with liners. This batter makes 12 standard sized cupcakes. In a bowl, mix all the dry ingredients. In another bowl, whisk together buttermilk, oil, vanilla, apple cider vinegar and lemon extract. Dump the dry ingredients to wet and mix gently. Do not over mix. With a spatula, gently fold in the berries. Fill the batter into the cups almost 3/4 cup full. Bake for 22 - 25 minutes or till the toothpick inserted in the center comes out clean.

Cool in the pan for 10 minutes and then remove from the pan on to cooling rack.

  9. Muffins look so soft and delicious!! Can regular vinegar be used? Also would lemon zest be fine in place of lemon extract??

  11. Thanks everyone for leaving a comment. Suma, Yes. You can use regular vinegar in place f apple cider vinegar. Lemon zest in place of extract. I don't use any citrus zest since my husband hates it.
    apple cider vinegar has very mild smell compared to regular vinegar and that is the reason why I use that in baked goods.

  12. yumyum, these muffins look delicious! Mullberries are so delicious! Here they can be found in August / September on the markets! They are so deliciously sweet, I love to have them with a little crème chantilly (whipped cream) yumyum!!

  17. My sisters friend has a big tree in her backyard. I always get bags of mull berry and its gone as soon as I wash them. My daughter eats them all up. Next time I must try this cupcakes.

  18. Hi, i am a newbie to baking and lurk here often to check out the recipes. Being a fitness freak, I am on hunt for healthy recipes.

    So, I tried this one just now. A couple of questions.While the muffins tasted gr8 it smelled oily. Also, the top of the muffins were not as brown.
    I did not have any berries,so added 1/4 cup chopped cashews.
    1)I used peanut oil for the recipe.
    2) Should you powder the sugar before adding, I did. Did I do somthing wrong?
    3) I baked at 175 deg c for abt 20 min. Should I abked it for 5 more min?

    Thanks for giving a feedback. These cupcakes should be fine without berries. The base is a vanilla cupcake batter. You can use peanut oil but it has a distinctive flavor and that is the reason for using oil with neutral smell. You don't have to powder the sugar. I think the cuppies needed couple more minutes. Also, make sure that your oven temperature is correct. They are not the same as the setting sometimes. Oily smell could be because of peanut oil especially if you bought it from Indian store. They are peanut oil not refined oil. Refined oil has less smell. Hope this helps and do keep giving me the feedback.
