What would you do if you found a box of cocoa powder soon to be expiring in your cupboard? I don't know about you, but I made chocolate mousse.
When I was organizing my kitchen cupboard, I noticed that I had one half full box of cocoa powder (hershey's special dark) which would expire soon. I was thinking what to do with it and the recipe on the box caught my attention. It caught my attention since most of the chocolate mousse recipes I have seen have eggs in them and this one didn't. But, it had gelatin in it and I used agar agar powder in its place. I had a box of cool whip to be used up too and there it went in the place of whipping cream.
Ingredients:
Dark cocoa powder or dutch processed cocoa powder - 2/3 cup (See Note) - I used Hershey's brand.
Sugar - 1 cup
Cold Water - 1/4 cup
Boiling water - 1/3 cup
Agar Agar powder - 1 TBSP
Vanilla extract - 2 tsp
Whipping cream - 2 cups or cool whip 16 Oz container thawed in refrigerator (I used cool whip)
Method:
Take Cold water in a bowl. Sprinkle agar agar on it and let it sit for 2 - 3 minutes to soften. Pour boiling water to this and stir till agar agar is dissolved and is clear. In another bowl, mix cocoa powder and sugar. Pour the agar agar mixture to this and stir very well. Slowly start folding the cool whip. Be gentle not to over mix. Add vanilla and fold once again. Pour into serving dishes and refrigerate for at least 30 minutes before serving. If serving for longer than a day, cover with a plastic wrap. This can be stored in the refrigerator for up to a week.
If using whipping cream, add very cold whipping cream to cocoa sugar mixture and whip till firm. Then fold in the gelatin mixture and fold. Pour into serving dish and refrigerate.
Notes:
For a change use half regular cocoa powder and half special dark. If you do that, you might have to reduce the sugar a little bit.
Cocoa powder is unsweetened by default. I haven't seen a cocoa powder that has added sugar in it. So, yes you may make this mousse with hershey's unsweetened cocoa powder.
