Sourdough Chocolate Chip Muffins

As I mentioned in my earlier post, I had to use up some soudough starter. I made these 'Spicy Mint sourdough Muffins'. The rest of the sourdough, I used up in making these chocolate chip muffins. I however did not make this egg less for the fear of eating them. I am kind of funny, aren't I? Recipe is adapted from here.

Ingredients:
  • Sourdough Starter - 1 cup
  • Vegetable Oil - 1/4 cup
  • Egg - 1 large
  • Vanilla extract - 1 tsp
  • Whole wheat flour - 1 cup
  • Salt - 1/2 tsp
  • Baking Soda - 1 tsp
  • Sugar - 1/4 cup
  • Milk chocolate chips - 1/2 cup (You can use semi sweet too. I just had an open bag of these)

Method:
Preheat the oven to 375 F if using non-stick pan. Use 400 F otherwise. Line 8 regular size muffin cups with liner or spray with vegetable oil spray. In a large bowl, combine all the dry ingredients together except chocolate chips. In another bowl, combine starter, oil, egg. Whisk well. Add vanilla and give it one more stir. Add the liquid to dry ingredients and stir till combined. Stir in the chocolate chips. Fill muffin cups 3/4 full. For this batter, you will get 8 regular sized muffins. Bake for 22 - 25 minutes or till a toothpick inserted in the center comes out clean.
