Chewy Granola Bars (Eggless)

I started making granola bars for my kids once they grew teeth and could chew on. My Granola bars are never the same. I keep making many changes. Now that they are not babies anymore, I try to cut down on fat and sugar and try to add things that will make them like it too. They are funny when I put nuts or raisins into any baked goods. They eat nuts and raisins by itself, but find it unappealing if it is in the granola bar or cake.
When Madhuram announced her Whole Grain Baking - Brown Rice, I started thinking what to make and my husband went 'baking with rice flour?' and my reply was 'when I can bake with Ragi flour, why not Rice flour'. I could've just replaced Ragi flour with brown rice flour in my Ragi Chocolate chip muffins and Vegan Ragi Peanut butter cookies and I am sure they'll come out great since rice flour tastes better than Ragi on any day and in any recipe. But I love challenges and I wanted to make something unusual. So, here is my take on Granola bars with brown rice flour. It is adapted from here.



Ingredients:
  1. Rolled Oats - 2 cups
  2. Brown Rice flour - 1 cup
  3. Whole wheat flour - 1/2 cup
  4. Brown sugar packed - 1/2 cup (I used light)
  5. Mini Chocolate chips - 1/2 cups
  6. Salt - 1/2 tsp
  7. Cinnamon - 1 tsp
  8. Corn starch - 2 TBSP
  9. Vanilla - 1 tsp
  10. Applesauce - 1/2 cup (I used unsweetened)
  11. Canola or Vegetable oil - 1/4 cup
  12. Honey - 1/2 cup
  13. Water - 2 TBSP
  14. Peanut butter - 1/4 cup

Method:
Preheat the oven to 350 F. Spray Vegetable oil spray to an aluminum 13 X 9 pan and set aside.In a large bowl, combine all dry ingredients (1 - 8). Whisk together to combine. In a microwave safe bowl, combine all the wet ingredients (10 - 14) and microwave for 2 minutes until bubbly. Stir to blend well and stir in vanilla. Add the wet mixture to dry and fold in using a spatula. Batter will be thick. Spread on the prepared pan and smooth using the spatula. Bake for 30 - 35 minutes or till the edges are golden brown. Let cool for 15 minutes before slicing. These remain moist and chewy. Use it up within a week or freeze for later use. You could use almond butter in the place of peanut butter or omit it altogether. Use nuts or raisins in place of chocolate chips.  They tasted great. Don't go by the picture they are not very attractive.

    My son too likes dried fruits and nuts sometimes and not always. I'm sure it would have tasted good.
